ملخص: Food intake necessitates food monitoring and screening to minimize food-borne infections. The current study analyzed home-made pickles which are considered a popular food product in the Middle East. Total of 90 Gram-positive bacteria were isolated and tested for their tolerance to the prevailing high salinity and acidity. The isolated bacteria showed preference to low salt concentrations, and the majority tolerated the variations in pH. Notably, the isolated bacteria possessed pathogenicity factors such as antibiotics resistance, gelatinase, lipase, elastase and biofilm formation potentials which could be the bases for bacterial pathogenicity associated with consumption of pickles. However, the sensitivity of the isolated bacteria to tested disinfectants and the dominance of antibiotic-sensitive bacteria might decrease the health risks associated with the pickles’ indigenous bacteria. Nevertheless, the current study suggested to lower the recommended guidelines of bacterial loads in pickles set by the WHO and ICMSF.
